Always Glorious Muffins - a staple 'healthy sweet' in our house.

The recipe above in the photo is for the carrot edition, but I make this recipe all year- it's delicious with zucchini and apple in the summer.


Alternatively, I like to use mashed fruit, like banana or peaches, or any other fruit simmered on the stove into a mash (then cooled) instead of, or for half of the yogurt portion.


Obviously the nuts can be changed up and the raisins for other dried fruit or chocolate chips.


THE VERSATILE RECIPE-

Combine dry ingredients:
  • 1.5 unbleached flour

  • 0.5 cup oat flakes

  • 2/3 cup cane sugar

  • baking soda & powder

  • 2 pinches of sea salt

  • 1 tbsp spice - pumpkin spice, cinnamon


Combine wet ingredients:
  • 2.5 cup shredded fruit- carrot, zucchini, apple

  • 2/3 cup yogurt, or buttermilk- or mashed fruit (like banana) or pureed fruit

  • 1/2 cup oil - olive oil- or melted butter, coconut oil

  • 2 medium eggs


Combine the wet into the dry- in 2 installments.
Then add:

  • 1/2 cup raisins - or other dried fruit, chocolate chips

  • 1/2 chopped nuts - walnuts, any nut or seed


Bake 25 mins in buttered muffin tins at 350F.

I make 12 muffins.
