A super simple & quick side.
This dish adds a sweet, tangy and fresh flavour to your favourite meal...or a boring meal that needs some OMPF!
Ingredients:
1 - 2 apples
1 large carrot
1 turnip
1/4 cup parsley
1 tbsp cane sugar
1 - 2 tbsp apple cider vinegar (ACV)
1- 2 tbsp lemon juice
1/2 cup of mayonnaise-(Or ingredients to make a simple mayo-like-dressing - 2 eggs, tbsp dijon mustard and oil (we use sunflower or olive oil).
Salt and pepper to taste

Method:
Clean your fruits and vegetables. We are going to cut them into small batons. The easiest method of doing this is to grate them using a cheese grater or if you have a mandolin you can use the baton add-on and carefully slice them. Once this is done, set them aside. Next you're going to finely chop some parsley- but leave a couple leaves for garnish! Set aside.
Next we are going to make a dressing for the slaw.
Start by cracking two whole eggs in a bowl. Add in dijon mustard, this is our binding agent, it will prevent the mixture from splitting. If you like a tangy / zippy flavour, add more to your liking. Using a whisk start to combine the ingredients. Begin to whisk and after a few seconds begin to add a little of oil at a time.
Make sure you do not pour too much oil in too fast or the mixture will split!
As you whisk it will slowly thicken. If it becomes too thick add 1-2 tsp of water thin it out.
Next add the simple mayo onto your coleslaw. Add in a couple tablespoons of ACV, lemon juice, the cane sugar and the chopped parsley. Once combined, try your slaw. It should come off sweet and earthy with an enriched flavour from the dressing. Season to taste.
You're ready to go!! Add the slaw to a beautiful dish, or just amp up a boring dish with some awesome nutrients and crunch!! Store extra in a jar for 1-2 weeks, as long as you do not contaminate the jar, it will stay fresh and gain even more flavour.
