I don't really measure ingredients- however this time I did to get an idea!
Pre-heat over to 250F.
Wet ingredients:
Mash 4 small bananas
4 small eggs
1/4 cup melted coconut oil- save some to grease the baking pan
Mix dry & then add to wet:
1.5 cup oat flour - grind oats in the blender until they are soft and no longer flakes
1 tbsp ground chia seeds - grind flax seeds in blender
1 tbsp ground flax seeds - grind chia seeds
Sprinkle with pumpkin pie spice, or whatever spice you like- cinnamon, clove, nutmeg, allspice
Combine all ingredients and pour into a pyrex type of baking pan (for casseroles).
Top the mix with a design of berries. I used frozen blueberries and cherries.
Place in oven for 1 hour. Check to see if it is brown enough for you. We took it out after 1 hour.
Store in fridge or cut into pieces and freeze.
Serve on it's own. As a snack, breakfast, I like it on days I run.
Alternatively turn it into a dessert with maple syrup or ice cream. Or a less sugary option, with yogurt? I don't know you figure it out!
